The Menu at Al Ponte has
been carefully crafted by Sicilian Born, Award
winning Executive Chef, Carlo Lombardo. His
influence on cooking is profound and his
reputation around Sydney is also quite noted.
What’s striking about this Chef is his ability
to create new and exciting dishes with bursts
of modern Australian flavours, whilst
maintaining that traditional Italian Zest. With
an emphasis on Fresh and Home Made, he insists,
as evident on the Menu, that real pasta is the
one ‘Nonna Made’.
As you will appreciate the Pastas are almost
all made on the premises and Carlo has done
away with the traditional, rich and
overpowering red sauces and introduced modern
flavours made up of light natural stocks and
fresh tomato bases.
